...... Since this last post, I'm noticing smaller white growth popping up on top.

This morning it was starting to collect on the sides, so now I'm really excited!

I'm guessing by next week it'll cover the top.

Do I simply uncover and sip from a straw to judge acidity?

...when it covers the top of the tea, and firmed up more may be a good time to

have a sip with a straw gently inserted at side,so..let us know what you find?
