If you really want a translation - i'm sure there are online translators,but suffice to say, lo room temperature and a handful of degrees above freezing. Yeah people have been making vinegar in Europe for centuries, I can imagine them making it at 30C back in the middle ages. There's a great expression that goes something like 'don't confuse the moon-pointing-finger for the moon' which means it's all to easy to get caught up in what it says in the book without ever having practical, internal, working knowledge.
