Guest guest Posted January 4, 2001 Report Share Posted January 4, 2001 Laurel, For breakfast I usually make a shake with a tablespoon of cream in it.....since I seem to be fairly carb tolerant, I often puree a half a dozen frozen blueberries in it. I also keep a stash of frozen fish fillets and hamburgers in the freezer.....five minutes in the microwave and breakfast is served. Lunch is normally strips of some sort of roasted meat (chicken, lamb, beef) mixed up with some pre packaged salad mix. For snacks, I have cheese cubes, macadamia nuts, beef jerky (well I do when my husband hasn't pinched it all). Hope that gives you a couple more ideas....I'm really short on time as well, I work full time and have a 3 and 5 year old so I am always on the lookout for quick food ideas. Lack of time is how I packed on the weight....found it quicker to grab junk food or use a bottled pasta sauce than to cook.... If you really crave sandwiches, try making the Atkins rolls and using them for your bread. I'd recommend maybe packing the filling and the rolls seperately so that they don't get soggy. I tend to cook up extra meat at night and keep frozen veggies (asparagus, brocolli, cauliflower) on hand to make quick lunches with. Canned green beans heat up particularly nicely too. Or pack a baggie of veggies (cucumber slices, celery, radishes, cauliflower, brocolli, etc.). For quick breakfasts, I eat 2 hard-boiled eggs - in the car. I sometimes precook bacon and sausages and even thick ham slices so I can quickly reheat them and eat them on my travels too. I hit the road at 5:30 am and I don't pause for breakfast in the house.
