Gennie~ Generally I toss, in a bowl, stuff that will oxidize & turn brown

(like apples or avocados) with lemon or lime juice. But when it comes to

bananas, no I simply don't worry about it.

I choose my battles; yes, even with my food. Life is insane enough, without

worrying over every little thing that goes into my mouth.

I don't use the dehydrator often either. It is good to have though, for

crunchy snacks, and for drying out buckwheat and other grains that have been

sprouted. Way cheaper than buying them pre-done.

Drape a hand-towel over the opening of the GooD4U when you remove trays, as

a " door " . Works fine.

Afterthoughts: Not really a pain- you could slice the bananas into a bowl

with a bit of juice, then toss with your fingers, and lift out. That's how

I do apple slices. Yes, it would be a pain to dip each individually.

Plus: All this talk makes me think of trying Lemon Thins!! Blending the

banana with lemon juice, (leaving out the ginger and cinnamon) and following

the rest of my Ginger Thins recipe. They should stay yellow that way!

I have a Vegi-kiln, it's identical to the Good4U

unit. It is less expensive than the Excalibur and

works very well, I love it.

Melody - I have dried tomatoes in it and it works

really well, I love them! You'd love them too.

Jennie - when you want to remove trays to put a

bowl in it, just drape a towel down over the front

of the unit. That's what the guy who sold mine to

me does, I've tried it and it works great!

Hi. How exciting. I may just get to do some sun dried tomatoes.

I checked out the vegi-kiln. Looks exactly like the excalibur.

I looked at the 6 tray one.

I'm saving money.

Check out the Good4U, too, Melody. I've seen them priced less than the

VegiKiln, and I think it's the same manufacturer.

I suggest that you all go to Excalibur web site and watch the video. They

have different sizes One more thing, its made in the USA.      ew

I want all of you to check out this website. The guy just wrote to me explaining

that we don't need to buy a dehydrator.

That we can use this thing. It's all natural. YOu hang it up in the air on a

hook, you put the food on it, and NATURALLY, IT WILL DRY IN ONE DAY.

Hi Melody,

Before you go and buy this item I'd suggest that you do some homework regarding

the benefits of using a dehydrator.

Melody, I watched that video twice and didn't here her say that you could

dehydrate in just one day. I don't doubt that the divice will work, but

not quickly. Even faster out side in the sun, but you would prbabaly have

to turn it every hour or so.          ew

dehydrate in just one day. I don't doubt that the divice will work, but

'Cause you said you'd post some pics and we're still waiting. I, for one am

excited to see it and already have a spot in my kitchen set aside for my own. Do

you think a sunny east window is too bright for a green house set-up? Love the

Yes, I have heard of the " food pantry " thing. Bear in mind that food left

like that will be more subject to mold and air-born bacteria. And it will

take longer, too.

As for your green house: We were all mesmerized speechless, that's why!!!

LOL. It sounds wonderful!

I cannot wait until I get one of those tiny camera things, take photos, get a

disc and upload it to the internet. Then I can insert a hyperlink and you can

see my new mini-greenhouse.

It's the best thing I ever did. I don't have to cover any of my trays. I can

even use the lid as another tray. Imagine!!!! I doubled my trays. I'll still

rinse twice a day but just imagine. And the colors!!!! It just sits there in my

kitchen, all those shelves with all those pretty sprouts.

Oh, I especially like the way the trays sprout BETTER than the jars, because I

cut off the bottom roots and all I have is green green green. Looks lovely on my

breakfast egg when I go out in the morning. Everyone says " oh my what are those

green things? " Then I go off on one of my sprouting tangents.

lol

And I can assure you, I'm NOT buying anything that has to be hung up and the

food is left open. That is not me. I'll save for the vegikiln. To me, this looks

like the one I want.

Here it is Padmini.

Print it out so you'll always have it.

Melody's Tomato Cabbage Soup

2 28oz cans crushed tomatoes

1 half a cabbage head.

3 cups shredded carrots (and any other shredded veggie you might like to add).

diced up celery and onions (I used one onion and 4 stalks of celery, all diced

up)

To start, take the onions and celery, add some margarine or butter and saute in

a pot.

Throw in the two cans of crushed tomatoes. and 8 cups of water, and a can of

chicken broth. (If you want a thicker soup, add a can of tomato paste).

Shred the cabbage, put in pot. Add the shredded veggies to this in the pot.

Stir gently. Put on lid

Simmer on LOW for 1 and 1/2 hours. Stirring mid way. Some people add sugar to

this, but I add splenda because my husband likes this soup sweet.

And there you have it.

Melody, you are such an inspiration! I do believe I will think of you every time

I dip into a bag of chips...and maybe I will eventually curb my addition to

crispy salty snacks. I'm not much for sweets, and even though I love chocolate I

don't go looking for it. If someone offers it, that's another story. My kids

think I am a health nut, and I do try--but I am nowhere near where I should and

want to be. Keep preaching it, sister!

I do want to say one thing to you, though, Melody. I am very worried about your

use of Splenda. That stuff is poison! It is implicated as a cause of cancer!

Google it. PLEASE do yourself (and us) a favour and get rid of that. Use stevia

instead!

Phew, now that's off my chest I can read the rest of the posts with a clear

conscience.

Tonight I am dehydrating yellow onion slices. My son came in while I was

checking them awhile ago and tasted one. He said it was delicious, and asked me

to dehydrate some red onions--and he would probably snack on them. When he said

that it occurred to me that crumbled up dehydrated red onions would probably be

delicious on salads. Try it, I'll bet you'll like it--and it will be a whole lot

less fat and trouble than your onion rings, although I know I would love those

too!

Hi Connie:

funny you should mention Splenda. Tonight, when I signed into Verizon Central,

there is an article about ALL artificial sweetners. I don't know if you can see

this at your end.

The article was all about how they banned cyclamates, and ultimately found out

it didn't cause cancer, and how if you use Aspartame (which I dont' go NEAR),

AND sPLENDA, that it is completely safe as long as you do it moderately.

Now me?? I use one packet in the a.m. and one packet in the p.m.

and I also use Stevia.

I think the next time I bake anything I'll start baking using Stevia. We'll see

what happens.

Scary stuff. I'm not worried about my usage. I'm worried about my husband's

usage. He likes his stuff SWEET!!

So, in your expert opinion, with all the stuff out there, what would YOU use?

Hi Melody,

I'm by no means an " expert " , I'd look at the alternatives the others have

already suggested.

Stevia is a good choice. Organic sugar in my opinion is a better choice than the

artificial stuff. Using honey might be another idea. Moderation is the key. Too

much of any of any thing can be bad too.

For myself I'd stay away from artificial anything including genetically modified

foods because It isn't food as we were meant to eat it. Here are a few more.

To add sweetness, reduce fruit juices to 1/3 of their original volume by boiling

over high heat for concentrated flavors and sweetness. The use of additional

vanilla also accentuates the sweetness in a dish.

Dried fruits, such as plums, raisins, apples, pears, peaches, apricots,

cherries, and cranberries provide bursts of sweetness. Cutting each one into

very small pieces helps distribute the flavors and sweetness more evenly. (In

the same vein, using mini morsels of chocolate rather than the standard-size

chips helps guarantee chocolate flavors in every bite.)

Overripe fruits, such as bananas, provide a tremendous amount of sweetness,

moisture, and flavor. Always buy fruits -- especially apples -- individually,

not in plastic bags. The flavors and sweetness are much more intense when the

fruits haven't been packaged in plastic.

Sprinkling a small amount of sugar on a pie crust coated with cooking spray will

create the taste and appearance of sugar while using only fresh and dried fruits

in the filling.

There are many different ways to add color. For example, a small amount of

molasses not only provides color, but moisture and deep sweet flavor as well.

Sprinkling cinnamon or nutmeg on top of an item before baking gives the

impression of browning. And using a small amount of dark brown sugar with fruits

will give the dish an intense, buttery, rich color.

To increase moisture in baked goods, use mashed or puréed fruits -- ripe

bananas, pureed baby-food pears, prunes, sweet potatoes, and carrots. Applesauce

may be used, but the other purees seem to provide more flavor, tenderness, and

moisture.

Well, I guess we are back to using Stevia. It got a bit pricey but we have to

make decisions here. I don't eat fruit (once in a while maybe a wee bit),

because I know, (meaning I know MY body), and my diabetes, well, I know what I

can eat. I can eat an apple. I can't eat an orange. I don't like canned fruit.

I'm not a sweets sort of person, but my goodness, my husband!!!!

After we use the last of these packages. NO MORE SPLENDA.

I'll tell my husband why and if he gives me an argument, NO MORE SPROUTS FOR

HIM!!!

Melody, my wife and I split a banana every morning. That's one of my 3

daily portions of fruit that my diabetic diet allows.     ew
