Spanish Omelet with CheeseServes: 6 Prep: 5 minCook & Broil: About 18 min

Cost Per Serving: 66¢

1 Tbsp vegetable oil3 cups frozen O’Brien potatoes 1/4 tsp each salt and pepper3/4 cup (4 oz) diced ham8 large eggs1/2 cup (2 oz) shredded Monterey Jack or Cheddar cheese

1. Heat broiler. Heat oil in a 10- to 11-in. nonstick skillet over medium heat. Add frozen potatoes, salt and pepper. Cover and cook as package directs. Add ham and cook, stirring, until hot. Reduce heat to medium-low.

2. Whisk eggs in a large bowl. Pour into skillet and stir to combine with potato mixture.

3. Cover and cook 6 minutes or until eggs are set on bottom. Sprinkle with cheese.

4. Broil 4 to 5 in. from heat source 1 to 2 minutes until eggs set and cheese melts (see Tip). Slide onto serving plate and cut into wedges.

No potatoes for me. I have been good since Monday. Not on induction but all legal carbs. I am not in ketosis though, it's those stupid bars and shakes.

Here, I'll turn around and you can kick my butt for buying them again. I was at 187.9 this morning though. That's six pounds in two weeks so I am happy with that. I best get my butt to the grocery store if I want to keep it off though. I have been scrounging for food this weekend, eating a lot of bars and shakes. Tonight I am having two small chicken breasts and lettuce with salad dressing. Oh maybe i will saute some mushrooms too before they go bad. I forgot I had them. I have cauliflower too, jees I could have a veritable feast and what do i eat? bars.

well, heck....it IS yummy! ANYTHING at this point with potatoes in it would be!! Just kidding we know you meant well, but we had to go to town on it! It really does look delish though, and you can do the same thing without potatoes and just dick some peppers and alittle onion.

That is good on the six pounds! I lost only five and so wanted that number 6 as it would have me in the one thirties, but it was not meant to be...or who knows, the scale might be kind to me tomorrow. I FEEL skinnier, how about you?
