Two of my three daughters live close to me. One has a chronically ill baby

and my other daughter helps her along with working full time with a child of

her own. I try very hard not to accept her help. I did when I couldn't

move at all but now that I'm doing better I want to find ways to manage by

myself. I didn't let my daughters know how bad this was until I was better.

My not local daughter told me she'd hire home health help if it happens

again but I was really okay alone except for not being able to get meals and

don't want someone hanging out. I can move better now and could cook to

freeze but can't stand or sit so trying to figure ways to prepare food at

bedside so I can stock my freezer. My back gets worse any time I try to

even do something as simple as fix a sandwich or heat soup. I can barely

reach anything in the frig since I can't bend.

Laurel: I think we used to correspond quite a while ago. I seem to

remember your situation because at the time it was similar to my own.

Have you or are you seeing a spine doctor? Are you planning on some

surgery to fix things ? I know that this is not a pleasant idea but in

the end it would make your life so much easier.

people can use better than regular pasta without spiking too much. Some people

I was cooking ahead and freezing portions and it was great. Unfortunately

we've had a bad year of family crisis and I was too exhausted and food run

out. I was eating out or at the hospital and not taking insulin because I

had a few scary lows from not paying attention. Thanks for reminding me

about replacing noodles with greenbeans in casseroles. My non local

daughter and son in law would cook for me but I don't live near them and

they have a preemie needing attention so not traveling yet. I do have a

freezer and it has been a big help when I had good food in it.

Laurel, if you can work in bits and pieces there are things you can make

in bulk, that will fit your food tastes.

You can get a pork tenderloin, cut it into half or inch rounds and cook

it on top of the stove with a package of shredded cabbage, with or

without sauerkraut, if you like it.

So first you cut, then rest. Then you cook the meat, it will cook very

quickly, on top of the stove, with or without oil or butter. In the

meantime, the cabbage gets cooked in the microwave. Mix it all

together, eat a portion and put the rest in the fridge to blend for the

next meal.

cappie will tell you how to marinate the green beans.

Consider adding veggie juice mixed half and half with water and a splash

of vinegar (if you can tolerate it) with your meals.

Nuke a couple of Life Choice dinners. Mix them with previously cooked

Dreamfields pasta. Another meal or three. Like ml, I like the elbows,

once cooked they take up a lot of room on the plate.

Laurel I am a very picky eater and I have gotten in trouble through the years

being that

way like for instance being a " milkoholic " and still have trouble with ice cream

when I

give in. I have not conquered all my bad habits but I keep on trying for some

reason,

not sure why.

I have found that having Butchers bun size franks with chicken and pork from

Safeway and

Morrell cubed ham pieces that are packaged well and you can just cut a part

of the

sealed package and then put in another bag and it keeps well and already to eat.

I like

the franks because these particular ones don't upset my stomach, most do. These

are not

perfect choices but much better than the unmentionables I want. You have to find

what

you can tolerate and like at least to a degree. You could also put these in with

Dream

Fields. You can have cheese on hand easy to cut or cut it up in pieces and keep

in a bag

ready to go.

Helen and Cappie and Vicki and others on this list are very experienced and

knowledgeable and will have lots of good tips. YMMV which I never related to but

basically means everyone is different and likes and dislikes and how thing

affect you

are different. I like to use unsalted cashews from JJ Hull online. They have all

sorts

of nuts and you can get unsalted. I have high blood pressure too so this is a

good

choice for me and I always have some by my bed at night.

Right now I can't even find my kitchen but I can still find my parakeets large

flying

cage to take care of them. But one thing that helps me is having a rolling chair

in the

kitchen. I cannot stand except for a short time either.

Hi Cappie, I am that person. I have done the opposite of you about my

health and need to try harder. I was lurking now and then and aware of the

struggles you have staggered through. I applaud you for your hard work.

No surgery planned for me. Just physical therapy and being urged to get

some weight off. My doctor emailed and said my recent tests showed

arthritis in my spine and there were references to narrowing,spurring,

degenerative facet disease, spondylolisthesis in different locations. I

don't understand any of it but my daughter told me some of the locations

explained why the swelling hit my sciatica.

Lou, I am blessed with good family that will help but they have busy

lives and I won't ask for help if I can find a way myself. My daughter was

upset that I'm still having problems fixing food. She wants to hire a

homemaker to come in to cook meals for me. I refused so she now wants me to

choose mail order meal delivery that she will pay for. Maybe what I really

want is my food the way I make it.

Ah yes Laurel: I have most of those too. Right now I have two herniated

disks in my lumbar region that are hitting a nerve in my hip every time

I move the wrong way. The pain is something like sticking a fork into a

sensitive tooth--excruciating for the moment but gone in a flash. These

same disks gave me a bout of sciatica 2 yrs ago & I think I only dosed

in a rocking chair for about 2 months. I am prob going to have to have

surgery eventually on these but last year the doctor said that for now

the weight loss took just enough strain off my spine to delay things for

awhile longer.

Laurel you can buy fresh veggies already cut up & prepared for the meal

or pot. You could use some raw with a dip made of yogurt & cream cheese

spiced up however you like it--my favorite is horseraddish. I also

marinate steamed or nuked veggies in olive oil & vinegar with oinion or

oinion powder & garlic or garlic powder & salt & pepper. I use either

broccoll or cauliflower or green beans or wax beans or whatever you

like. Put in a covered plastic tub & let them marinate overnight. I

munch on these whenever I get hungry between meals & this avoids eating

other stuff. I vary the kind of vinegar for variety. Balsamic is nice

on broccoli & rasberry is good on green beans,

Where do you find mail order meal delivery? Safeway here in Western WA is

supposed to

deliver and I had checked just in case I can't drive anymore and they don't do

it in

this location.
