It just means that carb count isn't your primary focus as it is in Atkins. This WOE is more moderate carb w/ emphasis on quality of carbs. The pepperidge farms bread is good. What you are looking for in the ingredients is not to see 'enriched wheat flour' as all normal breads are made w/ wheat and they take out the good parts and have to put some back by 'enriching' them, but they do not put back the fiber. They are processed. You want your bread to have 3 gms of fiber at least and have in the ingredient label, Whole wheat, or whole grain as the first ingredients. Mustard is pretty much a non issue,you don't eat enough of it to be a problem, but mustard is a veggie.When they make it into yellow mustard they add spices and vinegar but its still fine.
