Hi all,

Well once again it is later in the day, but I am trying to get caught up on the

messages. The kids did great at swim lessons this morning, but it was so hot

sitting there even at 9am.

We will be having chicken fajitas. I grill b/s chicken breasts and serve with

lettuce, tomatoes, onion, grilled veggies, spanish rice, ff refried beans, and

fresh made tortillas. I can't wait to out my tortilla press!

enough chicken so I can have extra for in my salads. In fact usually I fix mine

like a big salad, and use salsa for dressing, instead of like real fajitas.

They are super easy and low in points.

We are having Hungry Jack Casserole. This is one I used to make

before WW and I have always liked it. It has ground beef, a big can

of baked beans, bbq sauce, and brown sugar in it. Then you take those

little refrig. biscuits and cut 'em in half and line the casserole

with them, topped with cheese. I rinse my beef, and use lwft cheese.

I think it is approx 9 pts per 1/6 serv. Not low pts by any means,

but good. I will also have corn and bread with dinner.

how much was it, and are they low in points?

The tortilla press I bought at a Mexican grocery store here in town, but I

saw another one that I think I might end up getting.

This isn't the exact kind but very close:

Now for the recipie I have been using these, they are both very good!:

BASIC FLOUR WRAPS/TORTILLAS

Makes 8-10 wraps (2 points each)

1 cup warm water

2 tablespoons extra virgin olive oil

1/4 teaspoon salt

about 2 cups flour of choice, whole wheat, unbleached, Kamut etc.

Optional ingredients:

1 tablespoon honey

pinch chili powder

pinch ground cumin

pinch garlic powder

Proceed as directed for mixing, pressing and cooking.

*If you leave out the honey and all the optional ingredients,and press it

thinner, this is a traditional whole wheat tortilla.

FAT-FREE WRAPS/TORTILLAS

the kneading surface and place the bowl over top.) Let dough rest at least

30 minutes.

HAND ROLLING AND GRIDDLE COOKING

After the wrap dough has rested 30 minutes, divide the dough into portions

determined by the recipe. Shape each portion into a ball and place back in

the covered bowl to keep moist. Remove one portion and lightly dust with

flour. Pat ball into a flattened circle and place on a lightly floured

surface to roll. With a light rolling pin (I use a pastry roller) roll dough

into a 6-7 inch circle by rolling and turning each time. Do not roll too

thin or your wrap will be tough Place the wrap in a large UNgreased skillet

or griddle that has been preheated over medium-high heat. Watch the surface

of the wrap for about 30-45 seconds until you see the edges start to cook

and possibly some small bubbles appear. Flip the wrap over and cook on the

other side, about 30 - 45 seconds more, or until done. Cook

completely but do not overcook. Immediately remove the cooked wrap and wrap

in a clean dish cloth to keep warm and soft. Repeat process with remaining

portions. When you get comfortable with the process, you can be rolling one

wrap, while one is cooking, but BE CAREFUL! If you forget the wrap in the

pan, you will have a tough, overcooked cracker, not a lovely, soft, supple

wrap. I set a timer for 30 seconds each time I place a wrap in the griddle,

and that helps keep me on track. Wrap it up and enjoy!

GOOD MORNING EVERYONE!!!!!!!

What is on the menu today? We will be having that Sweet and

Sour

chicken salad recipe that was sent by SaraBeth yesterday, it sounds

yummy

and I will make one or two substitutions but I think it will be good.

Will

serve it with a salad of artichokes, roasted red pepper and hearts of

palm

and probably kalamata olives. For dessert it will be caramel apple salad

I've got class tonight (made 98 on my mid-term exam! WooHoo!) so it will
