We are having Awesome Chicken Stroganoff and salad-can't wait to try

this recipe as I hear it is good:)

Hi Zephyr,

We just got home from swimming lessons and I haven't really checked what I have

on hand yet. I am thinking I have some pork chops in the freezer, so we will

probably have those grilled. I know I have some yellow squash and green beans,

so I will grill those up too. Maybe some couscous, haven't had that in a while

and fresh bread.

Hi Zephyr,

Oh, and Maureen, I forgot to mention that at SAturday's meeting, my

leader asked if anyone had any quick and easy on the go foods so I

raised my hand and suggested the infamous MAUREEN SALAD and there was

a chorus of " OOOOh's " " Aaaaaaah's " and " What a gread idea!!! " in the

room. There were about 40 people at the meeting so your commission

check should be extra big this month...lol!

Trying something new today!

BEST BBQ CHICKEN EVER

Courtesy of: Cooking Light magazine

Servings: 6 Points per Serving: 3.5

2 tbsp. butter

1/2 cup ketchup

1/4 cup fresh lemon juice

1/4 cup low-sodium soy sauce

1/4 tsp. black pepper

1/4 tsp. hot sauce

6 4-oz skinless, boneless chicken breast halves

cooking spray

Melt butter in a medium saucepan over medium-low heat. Add ketchup and next

4 ingredients; bring to a boil. Partially cover, and cook until reduced to

2/3 cup (about 15 minutes), stirring often. Prepare grill Place chicken

on grill rack coated with cooking spray. Grill 12 minutes or until done,

turning and basting with 1/3 cup sauce after 8 minutes; serve with remaining

1/3 cup sauce.

Nutrition: Calories: 157 Fat: 5 g Fiber: .4 g Sodium: 693 mg

Wonderful Stuffed Potatoes

" 4 servings (2 potato halves ea.) 3=points ea. serving "

4 medium potatoes

3/4 cup cottage cheese, low fat with chives

1/4 Cup 1% low-fat milk

2 Tablespoons butter buds® -- liquid

1 teaspoon dill weed

3/4 teaspoon salt-free,garlic & herb seasoning -- McCormick

4 tablespoons parmesan cheese

Prick potatoes with a fork. Microwave potatoes as you would for baked

potatoes. Cut potatoes in half lengthwise.

Scoop out potato leaving & mash pulp. Mix in remaining ingreds. except

parmesan cheese. Spoon mixture back into potato shells. Sprinkle top of

each potato half with 1/2 T. parmesan cheese. Place on baking sheet & bake

15-20 mins., @ 425, or until tops are golden brown.

Per Serving (excluding unknown items): 168 Calories; 2g Fat (13.5%calories

from fat); 5g Protein; 26g Carbohydrate; 2g Dietary Fiber; 5mg Cholesterol;

214mg Sodium. Exchanges: 1 1/2 Grain(Starch); 1/2 Lean Meat; 0 Vegetable; 0

Non-Fat Milk; 0 Fat; 0 Other Carbohydrates.

in 1 " of water in a saucepan; add sprouts. Bring to a boil. Reduce heat;

cover and simmer for 5-6 minutes or until crisp-tender. Drain. Add the

remaining ingredients and toss to coat. Arrange sprouts in a single layer

in a 15 " X 10 " X 1 " baking pan coated with nonstick cooking spray. Bake,

uncovered, at 425° for 15-20 minutes, stirring occasionally. Serve

immediately.

Nutritional Analysis: One serving (2/3 C.) equals 101 calories, 5 g. fat, 5

mg. cholesterol, 244 mg sodium, 14 g. carbohydrate, 4 g. fiber, 4 g. protein

We are having a skillet supper: turkey polska kielbasa cut into

chunks with sliced potatoes, green pepper and onion with a little

seasoning. I just throw it all in together and simmer till done. I

have used beer in the skillet before to add flavor and help cook the

potatoes . It is yummy and the alcohol cooks out of it. I think we

are out of beer so I might use chicken broth instead. Also having

fresh strawberry and banana fruit cups and bread from our store

bakery- not fresh and hot but it is good and tastes homemade.
