QUICK CHICKEN AND STUFFING QUICK CHICKEN AND STUFFING Serves: 6 Source: " 1,001 Recipes For People with Diabetes " by Surrey Books Info: http://diabeticgourmet.com/book_archive/details/22.shtml INGREDIENTS - 3 cups croutons - 1 cup reduced-sodium fat-free chicken broth - 2 large carrots, coarsely chopped - 1 rib celery, coarsely chopped - 1 small onion, finely chopped - 1 teaspoon dried marjoram leaves - 1/2 teaspoon dried thyme leaves - 1 can (10-1/2 ounces) cream of mushroom soup - 1/2 cup fat-free milk - 1 teaspoon dried parsley leaves - 1/8 teaspoon black pepper - 6 boneless, skinless chicken breast halves (4 ounces each) - Paprika, as garnish DIRECTIONS In a large bowl, combine croutons, broth, carrots, celery, onion, and herbs. Spoon stuffing mixture down center of a 13 x 9-inch baking dish. Mix soup, milk, parsley, and pepper in medium bowl; spoon 1/2 the soup mixture on each side of stuffing. Place chicken breasts over soup, overlapping if necessary. Pour remaining soup mixture over chicken. Sprinkle with paprika. Bake, covered, 20 minutes at 400 degrees; uncover and bake 10 minutes longer. Just remember that once upon a time we had 12 children at home plus my wife's parents living with us. I did a lot of the cooking because my wife was more than busy careing for the smaller children and her mother who was quite ill. I normally prepared a meal for 17 folks. Now, subsequently we will have a pre meal snack tray containing celery sticks, cauliflower pieces, little Broccoli trees and pork rinds... Oh yes, we will have assorted cheeses and meat squares with a cute little toothpick with the frilly things on it. Now, I feel so much better knowing that I have done the correct thing. Herman my guide anamil /he does not like to be called a dog /, and I started to the city; I behind the wheel holding Hermans leash through the windo and he was suppose to walk the center line. This is Florida and they tell me that the sun gets real bright and of course Herman forgets his sun glasses, to make a long story short he can not see the center line and crosses over into the other lane and a police man just happens to come along and he gives Herman a ticket for running on the wrong side of the street.
