<< I read somewhere that raw carrots were

fairly low carb if you deduct the fiber but cooked carrots are higher in

carbs because the fiber breaks down. Is this true for cauliflower

also?>>

Any cellulose fiber is broken down somewhat by heat, which therefore

makes the carbs more accessible to our bodies. The cellulose of

cauliflower is found more in the stem and " branches, " if you will, than

in the florets. I have read it's better for you raw because when cooked

something about it is less healthy (something to do with being

carcinogenic), but I don't know if this is true.

My life is full of temptation. I have 14 kids in my house during the

day and of course they are not on atkins. My helpers know if they are

going to make a treat they have to give me time to fill up on something

else first. One of my helpers is even starting atkins. It usually does

not bother me but I do forbid my very favorites (henceforth to be

unnamed<L>).

Last night I dreamed my father had made a huge table full of home-made

*******. They looked so good I ate one, woke realized I was dreaming

and went back and ate a bunch. No kidding I knew I was dreaming and

stuffed my face...is this cheating? I was down 1/2 pound this morning.
