I've got chicken wings and cream cheese for lunch (this cream cheese is using all my veggie carbs up today!). I bought an oven roast to through in the oven this afternoon so I can have nice roast beef for dinner (hubby has chili in the crock pot today and the smell is driving me crazy!). I was wondering what about a month-long challenge to get us looking good for Valentine's day? The incentive being to look good for your sweety and/or get healthy because you love yourself. Perhaps we could all challenge ourselves to either a weight loss goal or a behaviour (eat under 25 carbs a day, exercise 5 times a week, drink all my water... whatever!). Whatcha think? I can't seem to stay on track, since Thanksgiving I have been bouncing around with the same 5-6 lbs. Yesterday I was craving popcorn, did manage to fight it by making the recipe that someone posted for German Cinnamon almond. However I ate the whole batch, using pecans that I ahd in the freezer(1 cup chopped). I don't know what brought that strange craving on...but thank goodness I fought it and won. This morning I drank 32 oz. of water before bkfst. and had 2 eggs, 3 slices of bacon and am still nursing a cup of green tea with splenda and cream. As soon as I finish the tea, I will drink another 32 oz(love those 32 oz. Tco Bell glasses). Lunch will be 2 slices of leftover pork loin roast and some sort of veggie(will have to look in the freezer, am out of salad greens till Thursday). Have no idea what supper will be, but snacks include sunflower seeds and string cheese. I am also going to make a double batch of Atkins rolls so I can use up a dozen eggs before Thursday when I go to town. So count me in and hopefully all the old timers will join us. Mine will be a challenge as I will be eating out, and probably at a pizza place! Both places have LC options either chicken and a dinner salad at one pizza place or a taco salad that I build myself off the buffet line, green beans, and some LC raw veggies with ranch dressing. I have to stop at the store after work, so I can pick up anything for dinner and should be okay. I think a month long challenge sounds great, but right now I have to do it one meal at a time. I can't seem to get past three days of strict LC eating lately, so a month is way to long for me! LOL I am just going to take it one meal and snack a day. Hopefully that will turn into a month of successful weight loss. I will challenge myself to drink all of my water for the next month though. That will probably be easier than eating appropriately for a month. It isn't as intimidating considering my past problems staying LC. I will continue to do meals and snacks one at a time. My attitude used to be real good about if I do bad at one meal just make better choices at the next one. Lately, it is more, well I blew it at XXX meal, I guess this won't hurt if I eat it now and I will go back tomorrow... That doesn't work! My goal is to drink 72 ounces of water a day and try to keep carbs under 40 per day (after two weeks of under 20). So far I have had only 3 carbs for the day, a good start. I'm sure the newbies are a little confused by the need to challenge for one meal, but I would have been too when I was new and loving all the options that were not options on low fat. Somehow in my crazy cravings, I managed to eat a whole bar and in my mind it tasted just like the Toffeeaffee candies I used to love.(same flavors anyway). That started a binge of 1 whole bar a day. Thank goodness I had only 6. This only proves that I am truly a carb addict, and will have to fight this addiction for the rest of my life. I have been on this woe for 1 year,8 months and 12 days and still have not quit this woe entirely because I know that this does work, if I can only gather the will power it takes. This list is the key to support. I don't want to discourage the newcomers by my experiences, but let them know that 1) they are not alone and 2) this is a LIFETIME COMMITMENT and it can be done. Just stick around and don't give up even tho it seems impossible at times, we are all here for you and as long as this computer cyber world holds up, I will be here too.This list is probably more knowledgable than the Atkins clinic, because we are living it , not just teaching it. Anything really carby will really set me off. I am hoping to be able to get to the point again where those things don't even sound good to me anymore. I survived my lunch challenge and afternoon snacks should not be a problem as long as I avoid the candy dish at the service counter. I had taco salad that I made myself from the salad bar and some green beans and raw cauliflower. Then we stopped at the grocery store and I bought pork chops for tonight and a pork loin roast for the crock pot for tomorrow. I also picked up some celery, cauliflower, and cream. I had one left and cut it up and put it in my freezer as well.
