Bourek (Beef-Stuffed Pastry Rolls)

Young enough to still be warm

State of ecstasy.

Title: Bourek (Beef-Stuffed Pastry Rolls)

Categories: Algeria, Appetizers

Yield: 6 Servings

1/4 c Vegetable oil 1 Egg; beaten

1 sm Onion; chopped (1/4 cup) 2 tb Flat leaf parsley; chopped

1/2 lb Ground beef 6 Phyllo sheets; 12x17 " ea

1/2 ts Salt; or to taste Lemon wedges for serving

1/4 ts Black pepper

Heat 1 tablespoon of the oil in a skillet, add the onion and stir-fry

over moderate heat for 2 minutes. Add the beef, salt and pepper and

stir-fry for 5 minutes. Add the egg and parsley and fry for 1 minute

more. Cool well.

Take 1 phyllo* sheet and spread it out flat with a short end nearest

you. Place 2 heaping tablespoons of the beef mixture 2 inches in

from the short edge. Fold both long sides in toward the middle,

beginning with the short end roll the phyllo to shape a packet 4

inches long and 1 1/2 inches wide. Repeat with all the remaining

phyllo sheets and stuffing. Set aside.

Put the balance of the oil in a skillet over moderate/low heat and

add the rolls. Brown on both sides for about 3 minutes; the low heat

prevents the very thin pastry sheets from burning. Drain the rolls

on paper towels for a minute.

Serve warm with a squeeze of lemon juice.

*Greek phyllo dough can be bought frozen in most markets today.

Well, here it is just a few days after Christmas and there appear to be some of us missing in action. So lets just sart things off with a roll call!

Sharon in Ohio here it is momday afternoon about 2:27 PM. for this moment right now my life is in ok mode and all is well. Don is resting in the other room and recovering from his heart attack. I am counting my blessings and figuring out how to get out of debt feel better look ten years younger and have more me time. So what are you doing?

Hi Sharon. It is 12:13 in California. I was planning to start the

Atkins on January 1 until the news broke about the mad cow diseased

meat being sent to 8 states. Things have quieted down now that

Christmas has come and gone. In my culture we're supposed to do New

Years day in a big way but I'm not up to it. Requires a lot of

preparation and cooking the day before. Exotic ingredients like burdock

root, and gourd strips called kampyo, and sea weed. I could find those

things at the corner store in Honolulu where I grew up but they are not

readily available where I live now and I have no desire to drive

somewhere to shop with hundreds of other like-minded folks. So I guess

I'll just get a bottle of elli's sparkling cider and a bucket of

chicken from KFC and watch the Rose Parade on January 1.

Bridget, here. Just got back from one set of calling hours after a

burial and dinner for the first one this morning. Facing the second

funeral tomorrow. The stress is going to be practically unbearable.

The husband of the woman who died is getting furloughed from the

cardiac unit for the funeral. I'll be holding my breath the whole

time hoping he makes it through the service. He need triple bypass

surgery and will be getting it Wednesday if his kidneys stay stable,

he has 75% blockage.

As for me, other than feeling like my heart is working too hard most

of the time, I'm doing okay.
