I have been researching Amazon.com and just can’t make up my mind!

I also did some searching and it looks as if the book Raw In Ten Minutes might be the ticket. The author claims you don't need a dehydrator or any fancy equipment to make the recipes. I have gotten other raw books from the library but I don't have the equipment needed to make most of the recipes. I own a blender, mini-food processor and juicer, That's it.

There's nothing wrong with eating meat raw, providing it's good meat. When I eat beef I eat it browned on the outside and barely warm on the inside, about as close to raw as you can come. I like the book....yes, she explains the theory behind raw eating (and is probably promoting herself, too....why on earth else would anyone write a book?<G>), but she also has a great recipe section and a great resource section. I recommend it.

I also have no's UNCOOK BOOK and Nomi 's THE RAW GOURMET. Carol's book is much simpler than either of those, although those are good, too, if you're building a library.

I also recommend the web site www.thegardendiet.com. Lots of good information there.

I saw that one on amazon.com. I read peoples opinions and they varied so I just didn’t know what to think. Some think she’s promoting herself and just explaining why she’s the way she is. Also apparently she eats meat raw. Am I talking about the same book? It did sound like it would be fun reading her experience.

Rene is a member of this group, and I recommend her book-she has wonderful info.

Also, I recommend adjusting any diet to suit YOUR needs-many of us have tried

raw diets, and ended up worse for the wear-it isn't for everyone. I would LOVE

to be totally raw, but my allergies and digestive issues don't fascilitate that,

so I modified by going about 80 percent raw/20 percent lightly steamed or

cooked, but then had to cut down the raw even further. Just pace yourself,

especially if your system isn't used to a lot of raw veggies-it can be taxing on

your kidneys if you go too fast.

I am giving " dittos " on what says. I have Rene's book and find

the recipes wonderful help, and also Rene's website with all her videos

on the recipes. I am sure she will pop up here soon.

Penny,

I have had Rene's book for about a month and I just love it. I have tried

several smoothie, soup and saloup recipes and they are wonderful. I tried some

dips and the kale chips recipe. The book has tons of information on how to soak

nuts, how to go raw in stages. I also have watched several of her videos on her

website and they are helpful. If you like her page on Facebook you get daily

info which is interesting. Since watching her juicing videos I tried juicing

this month. Juicing gives me more energy than just the green smoothies. I have

squished the leftover pulp onto a cookie sheet and cut it into squares and dried

it. That makes a very handy, tasty snack when I am going shopping and get

hungry.

I have wondered if one could use Rene's recipe for kale chips, only put

it all in the blender and pour/scrape it onto a teflex sheet and

dehydrate and get crisp ships? I love her kale recipe where you make the

mix in Vm and toss kale with it and put kale on dryer sheet but pouring

seems easier.

That sounds like a great idea to try. Did you know that just PLAIN blended pineapple, when dried, makes something like a "pineapple chip" (it is surprisingly crispy!)

Apple sauce becomes a very tasty apple roll up. I have no idea what it is in pineapple that makes them dehydrate "crispy"Yogurt becomes taffy when dehydrated !!!

How do you dehydrate these things? Do you use a machine or the oven?

So the apple tends to stay sticky, and not get crisp even over

longer time?

Hello Trish - I have an excalibur dehydrator (I bought it as a reconditioned unit on EBay) They offer a 10-year warranty and it is an amazing machine. If you have a Vitamix, an Excalibur, and Rene Oswald's book - you can make a TON of raw, tasty, and healthy foods! :-)BUT - an oven set on the lowest setting you can get it at, should make a lot of these things too.Look for "Kale Chips" in the Links>Recipes section - they are DIVINE (and dehydrated or baked)

Yes, apples turn into chewy fruit roll ups, and I don't know why only pineapple gets crispy. Pineapple chips have such a delightful taste and mouth feel, that I tend to eat a whole tray full (or two) in one sitting! :-)

Apple sauce becomes a very tasty apple roll up. I have no idea

what it is in pineapple that makes them dehydrate "crispy"

Yogurt becomes taffy when dehydrated !!!

Velda,

Sure you can pour everything into the Vitamix and make kale crackers. You

might need more vegetables to get the consistency right. I don't know if they

would be as paper thin and crispy as the kale chips are, you would have to pour

the batter thin. By the way I made more kale chips yesterday and they were the

best I ever made. Here are the spices I used:

Kale chips

1 bunch kale, stems removed- about 10 leaves

1 teaspoon curry powder, garam masala

1/2 teaspoon cumin, onion powder, garlic powder, chili powder, paprika, white

pepper, coriander

few drops hot sauce

1 tablespoon chickpea miso

1/4 teaspoon himalayan sea salt

1/4 cup nutritional yeast, sesame seeds soaked overnight

1/2 red pepper

1 celery stalk

Blend in Vitamix. Pour dressing over kale. Add 1/4 cup soaked sunflower seeds.

Mix together with hands. I tried sprinkling the sunflower seeds onto the kale

after they were on drying sheets and they did not stick, but they do stick when

mixed in with the dressing.

That's what I am making today. It makes wonderful fruit rollups. I made Lea

Ann's recipe for applesauce - 2 apples, little lemon juice, cinnamon and pour

onto parchment paper and dried. Wonderful. I made some last week with added

dates and they were too sweet, so today I cut out the dates.
