I am busy with zuccini and they are very fine ( a quiet revenge and improvement from last year zuccini discussion. ;-) This summer I will focus to pickle veges at unripened stage. Most veges sold at the shop are nearly ripen or already. It is OK with it, but not proper for nukazuke or pickling. Just slightly prior to the matured state or rather very young. Crisp,crunchy and greeny. it is better fruit sugar content is lower if it is for pickling. This summer is going to be another hot one. So get prepared with VitC and citric acids from young veges. Try all young veges. PS. This year in Japan, Nukazuke is a quiet boom. It is free pet and nutritious. I think this boom is due to social and economic depression.
