Apple Juice and Salsa

Ok, I put a TBSP of kefir in a quart bottle of Knudson Organic Apple

Juice (unfiltered). How many days does it take to ferment at room

temp? I suppose it will be like Heidi's Kefir Beer without using the

milk grains. I also did this with a pint of Seeds of Change mild tomato

salsa w/garlic & cilantro.

Since yesterday there is a small amount of gas production, slightly

more with the apple juice. Neither product has added sugar, AFAIK.

The apple juice didn't have much headspace so I sacrificed some to

taste testing. It already has a slight sparkling quality and a slight nip

to it. The salsa is making even more gas now.

Actually both will ferment without the kefir! But with the kefir you'll get more

of

the kefir probiotic effect. If you save the " dregs " and reuse them with the

grains,

the next batch will start faster. I keep the bottom 2 " of gunk at the bottom of

my gallon jar, and use it with the next batch. Most of that is yeast, and it's

not

a good idea to bottle yeast anyway, they tend to make too much fizz in the

bottle. Then when you open the bottle, you redecorate your kitchen. I was

reminded of this the other day, when I bottled the dregs for a mere overnight

stay.

Today is the 3rd day fermenting these two items. The tomato salsa

has lots of carbonation now and would probably taste better chilled.

Not bad though. The Apple beer is very similar to a wine cooler.

For the last 24 hours I have been watching another experiment

which is mild green Salsa Verde (Herdez brand) to which I added

some kimchi juice and 2 teaspoons of kefir. Absolutely nothing

happening in the airtight jar so far, no gas, no bubbles. The

ingredients list tomatillos, onions, serrano peppers, salt, & cilantro.

I suspect some kind of preservative, not on the label, was added

in Mexico where it was made. I may pour it down the sink if nothing

happens within the next day or 2.
