It's good to hear from you again. 1) I don't think you can take too much good fermented foods, but they are vegetables so you'd take them into account when totalling up your carbs per the ratios. I think it is ideal to only have vegetables that are fermented. 2) There is a difference in the kinds of good bacteria created by mixed vegetables contained in kimchi, but I think the advantages would be the same. I seem to be getting more sensitive to things that didn't bother me just a few weeks ago, like tomatoes. I'm assuming the starving candida has chosen this as its food. ==>I believe your changing reactions to foods could be more related your body using them to affect healing which results in healing reactions. But also ensure the food itself is unadulterated. Tomatoes are not in season now so where are they coming from? Other countries don't have the same certified organic standards as the US and Canada.
