Question on coconut oil

I honestly develop severe brain fog when it comes to understanding the

" story of fats " . So far I know olive oil and flax oil and butter and

coconut oil are the most beneficial - coconut oil also being antifungal.

But can someone tell me if it's okay to, say, saute things in coconut oil -

that is, to heat it to higher temps?

Thanks - Penny

My understanding is cooking with Coconut oil is fine. I have done it many times

and was told it is ok.

The saturated fats, coconut oil included, can tolerate higher

temperatures than the unsaturated and polyunsaturated oils.

You can find more about saturated fat at www.raypeat.com. If you find him hard

to read and

easier version of him can be found at www.litalee.com.
