The mayonnaise is one I made myself: only eggs, olive oil, salt and

lemon juice.

Hey , without cooking eggs you can get samonella (sp?). When

something calls for mayo - I use plain yogurt.

FYI, you can get around the salmonella issue two ways. 1 coddle (basically

poaching in a container for one minute) or buying pasteurized eggs, they are

actually pasteurized in the shell and are perfectly safe. However, of

course, they are a bit more expensive. (They have to make you pay to protect

you from their less expensive way of keeping the chickens in their pens

which is less sanitary. Boy are those guys smart or what? ;) ) Also,

homemade mayo is one of the most exquisite luxuries this diet seems to have

left.

Well its not fantastically nice mayonnaise, but its candida-safe

(although now I'm worried about salmonella too!), but it makes stuff

like tuna good on salads (tuna can be very dry)

try adding dry mustard to the eggs before adding the additional ingredients.

Also, the addition of herbs can make mayonnaise a wonderfully versatile

sauce.
