Guest guest Posted December 26, 2004 Report Share Posted December 26, 2004 For the first few weeks AT LEAST eat no apples or any fruit. And the almond bread recipe is in the files. I made up a Candida version that helped me to put on weight (it worked!) and included it in our files but I need to revise the recipe -- I'll do it today. I wouldn't mess with it for awhile though. If you're at the very beginning I'm afraid the best advice is to simply tough it out. You'll crave everything but just try to resist. These other things you can add in later GRADUALLY and are more for a long term approach to the diet. As I mentioned, I've been on this diet for half a year at least (and I actually think it's more like 8 months...) I originally promised myself that I would stick to this (sometimes hellish :-) diet for one year but I've gotten in a groove with the diet, I actually like it and so I'm aiming now for a few years to completely eradicate all my Candida forever. But I started just like you and SUFFERED in the beginning. It was entirely worth it and I promise that if you follow the basic diet to the letter you will feel much better at 3 months and then much better again at 6 months and so on. Just try to be strong and patient. It's really the only way and you will be healthier and happier for the rest of your life. In fact, you'll probably be healthier and happier than most people on the planet because I think this is an underlying problem for everyone (since the demise of so many traditional diets.) The ones I have been eating are buckwheat, millet, quinoa and amaranth. Millet cooks much like rice. Quinoa cooks much faster. I've gotten to like the taste of both quite a bit. I had some amaranth, but it's a litle harder to get around here. I like buckwheat pancakes with lots of butter for breakfast. I think the recipe I use is in the recipes section at the groups website, but just in case it isn't, it's very simple. I use 1/2 a cup of buckwheat flour, 1 teaspoon of baking powder (I use the kind with no aluminum in it), a dash of salt and usually some spices like cinnamon, cloves, allspice and/or nutmeg. I mix the powdered ingrediants together, then mix one egg and a tablespoon of coconut oil in another bowl, then mix in 1/2 cup of water. Then I add the liquid to the dry ingredients and mix well, cook on an iron skillet. This makes 3 moderate sized pancakes (~ 6 inches in diameter). I've been on a gluten free diet and buckwheat is controversial due to cross contamination. But I've always liked buckwheat.
