One of the things that pointed out to me about these two brands (Tropical Traditions and Coconut Oil Supreme) is that they are minimally processed. I've been using the Spectrum, but says that this oil is overly refined, heated, and otherwise sanitized. Hence, no yummy coconut flavor. As an addendum to all of this, I just called www.4radiantlife.com to order some books yesterday and found out that they are now phasing in Tropical Traditions oil and letting go of the other coconut butter they've been carrying. I have a general question to post for everyone, too. I'll be moving to Rochester, NY this summer, and I'm trying to get hooked up with the slow foods movement there. I've done some looking online and sent some email to the Buffalo chapter, but if anyone has any suggestions, I'd appreciate them. Thanks. That's all for now. In general I think that pretty much all of the Spectrum oils are pretty good. Supposedly though, truly unrefined coconut oil tastes basically like coconuts. The spectrum coconut oil doesn't really taste like anything. The difference is supposedly what they're made of. Spectrum, omega, and most others are made with " copra " which is essentially sun-dried coconut meat. It's not very sanitary and the coconut picks up some unfortunate smells in the process. As a result, during the processing they need to use a fair amount of heat as well as something to deodorize it. The extra-virgin types like the Coconut Oil Supreme and Tropical Traditions is made from fresh coconut and either not heated at all or very minimally. If you're going to cook, fry or bake with it, there's no reason to use the extra-virgin ones unless getting a good coconut flavor is important to you. If you're planning on using it unheated though, some people claim that there are healthful properties of the oil that are preserved when it remains unheated. I'm not too concerned about that until I hear a more concrete description of why it would be better. In fact, my main tropical oil at the moment is the semi-refined Spectrum Palm Oil. We use both and the regular coconut oil from them is expeller pressed and doesn't have a sent at all.
