Of lemons and fermented foods

Hi all and greetings from Finland,

My spouse-to-be is on a candida elimination diet. A few things on it

occupy my mind and I thought to ask you if you know the possible

reasoning behind. I read Candida Diet in a Nutshell from files

section and these things were not mentioned.

1. Lemons and other citrus fruits are prohibited, but grapefuit seed

extract is supplemented. What's wrong with lemons, then?

2. All fermented foods are prohibited. But eg. sauerkraut should

contain a lot of the probiotics that are now taken as a pill. And

I've seen one candida diet that has VCO and fermented foods as

recommended foods. What's this all about?

Also one other thing. Her eyelids have been badly swollen in many

mornings. Could that be candida die-off symptom?

===>Lemons are mentioned, and they are okay on the candida diet. In

fact many of the recipes for salad dressings use lemon juice as a

substitute for vinegar. Some people can also tolerate grapefruit

because like lemons it is low in sugar content. Grapefruit seed

extract is an antifungal supplement.

====>There is a difference between lacto-fermented foods and yeasty,

fungal-type or moldy foods. My article recommends cabbage rejuvelac,

which is loaded with good probiotics. If you haven't had a chance to

read it yet it would be well worth your time.

===>It could be die-off, but more than likely it is a reaction to

having too many carbs such as grains, or to sugar.

---One more question: What about cheese? Is it a complete no-no, or

could she use only unripened cheese? We've been eating some Zamorano-

cheese which is made from goat's raw milk and not matured for very

long. There's no notable reaction to it.

===>Some people do okay on cheese. It is not a complete no-no like

some grains and sugar. The cheese you describe sounds good,

especially it being raw. If she does well on it I'm sure it is okay.
