That's a great idea Sheila! Bake a thin omelette en use it as a wrap,

with vegetables in it, some foil around it, and your lunch is ready and

easy to eat, even behind the wheel or in public transport. Brilliant!

I'm thinking of some good lunches to take to school. Lunch breaks are so

short and you have to have something practical, which is not messy or

needs heating..

Hello Mike, I hope it is ok for me to intrude here. I am not a but

I

have been a long time lurker. I have been trying to come up with

something I

can have things like hummus on also. I have a recipe book about Crepes

and

there are recipes for Crepes made with different grains. A couple of the

recipes call for Buckwheat mixed with other things. I know Buckwheat was

the

original ingredient in like Caviar Blintzes.

I have not tried it yet so I am not sure if it would work. I have tasted

before but am not sure whether they added flour or not. I am very low

carb

so I have to be careful. Of coarse Heidi from a couple of other groups.

( I

don't remember If I am allowed to mention other groups here, some groups

frown on it) She is my hero. And she has come up with a few recipes for

gluten free that are too high of carb for me but may be ok for you.

There is

also the old lowcarb way of using thin omelet as the crepe and adding

any

filling you want.

I went looking for my book. I didn't find yet but I will keep on looking

it

anyone is interested.

ps I love hummus also. There is a Mediterranean restaurant and deli that

serves hummus and it is better than I can make.
