" Good fats and fatty nutrients " like butter, coconut oil, cod liver oil, essential fatty acids, vitamins A, D & E do not initiate fat in our bodies, but " bad " fats such as polyunsaturated and trans-fats do. These " bad " fats and carbs make your body create body fat. That is why the diet consists of high animal proteins (also contain good fats & fat soluble nutrients) and " good " fats with low carbs. The more toxins that are ingested the more our bodies create fat to contain them ( " bad " fats are toxins too). It is a survival mechanism by the body in order to protect vital organs. Even with all of that I can gain five pounds in a day with no other changes. Then it will take me three weeks to lose that five pounds. My diet consists of : egg whites, skinless chicken breasts, meat, fish, salads ( avocados, tomatoes, celery, cucumbers) olive oil. After reading the latest posts I find I am guilty of a big no no. Coffee I have been drinking at least four (12 oz.) cups a day with half and half. The only dairy I use is with the coffee. As of today I plan on eliminating all dairy and coffee.(that one will be a big change in lifestyle) I also use Dr. Mercola's Living Fuel mixed with water couple times a day. I use to eat strawberries and blueberries but have eliminated these since focusing on ridding myself from candida. I have been on the candida diet for about ten days. Check into the ingredients in Dr. Mercola's Living Fuel because it contains soy, which you know is not good. , your food sounds great. Can I come for supper? Good you noticing the coffee and half & half. I'm not as familiar with candida sufferers who have " locked in " weight like you. My friend here is having the same problem. If I find anything to help you, and Ginny, I will let you know. But you are 99% that is good for you. Well done.
