Add me to the list of chocaholics!!! I gave up cigarettes, and I don't drink

alcohol, but I did go out last night in the middle of a thunderstorm and

spend $40 on munchies!!!

Thanks, me too, I enjoy chocolate and cookies equally, we need a chocolate

and cookie anonymus group at least I do.

Actuall I need a group that keeps grandma from shopping. That is a terrible

vice. It is a good thing I don't have much money, If able I would shop daily

for my girls. they are going to Wisconsin for a week. I will miss them.

Stopped by today for lots of hugs and kissses.

Yes I love my own homemade chocolate chip and lemon-tipped almond biscotti.

I guess I wont be making much of that very soon. I haven't made it in a

Hi ,

Chocolate is okay as long as the ingredients are not avoids. Most chocolate

has dairy products in it. The ones you listed look okay. The only avoid I

can see is vanilla. I eat things with a little vanilla in them, but a lot of

people won't touch it if it has even a small amount of an avoid in it.

Hi, . Chocolate bar ingredients have some 'avoid' ingredients, I see.

What about raw cane sugar, everyone? I was tempted to buy some the other

day at Whole Foods, but I didn't.

Also, as far as pancakes are concerned, I have a recipe for them using rice

flour and some other ingredients. I can post it if anyone is interested. I

don't usually make gravy, but I imagine you could use rice flour for that,

Congrats on finding some legal sounding chocolate bars. I've been trying

out using spelt flour and quinoa flour. So far I made pancakes with stewed

fruit on top (yummy). Last night I bought a breadmaker and tried bread.

The bread is going to take some experimenting and maybe, oh my, even reading

some of the gazillion bread machine recipes in CR4YT or on the web. I just

substituted the amount of spelt and quinoa four for the wheat in the

breadmaker recipe. I added an extra egg. Then I tried to make it quickly

which the breadmaker allows. The result is a very funny looking loaf of

rather heavy bread. With more liquid and a longer " rise " time, I think it

will turn out better. First try. No big deal.

Raw cane sugar is good. It's the same as Sucanat, it's like the generic.

Sucanat is granulated raw sugar. The deal about raw sugar is that it's

whole sugar, including the molasses that they take out of refined sugar.

What gets taken out of the refined sugar includes minerals which enable

humans to maintain a stable blood sugar level after eating the stuff. Whole

sugar, or raw sugar, or Sucanat, has chromium, for instance, which has been

found very helpful in maintaining blood sugar levels in hypoglycemics. This

I learned from my fling with ayurveda. Asian Indians have a form of whole

sugar they sell in a solid form called jaggery. It has salt in it tooo

though.

Hi, Aikya. I have a book by Bette Hagman called More From the Gluten-Free

Gourmet that has recipes for bread machines using rice flour (brown and

white), potato starch flour (which I guess we shouldn't use) tapioca flour

(can we have that?), xanthan gum (can we have that?). I bought the book

when I married my husband 4 years ago, because he has an allergy to wheat

products. Maybe the recipes could be adjusted to our O limitations. Carol

Tapioca flour is okay and I don't know about xanthum gum. I have my doubts

about it but it's not on avoid (or any other) lists. Does the cookbook say

what the xanthum gum is suposed to do or substitute for? Might be able to

use arrowroot. I was thinking of trying different things we used in

macrobiotics (which didn't think people should eat gelatin -- great diet for

B's). Maybe just more eggs or egg white would do the trick. I noticed some

outfit here is selling a jar of egg whites...for those of us who can't deal

with/don't want to bother with separating eggs. When I was in that phase I

could never figure out what to do with the yolks. They make great facial

masks. Now of course we O's can go ahead and eat them.

You're exactly right. The non-wheat flours seem to require more moisture,

need longer to " get going " (I add yeast generously), and should be handled as

very soft, almost sticky doughs. Brief kneading, or just mixing well with

hands or a tool. Dump into a pan that does the shaping, like a baugette pan,

and forget the firm, elastic dough that wheat produces. I guess that's one

reason it became so popular (sigh!). Good luck.

Hi, Aikya. Thanks for the info. About xanthan gum, the book by Bette Hagman

says, 'If you've turned out hockey pucks when baking muffins, crumbs in

place of cookies, or lead instead of bread, you are well aware how 'quirky'

our gluten-free flours can be. Before the advent of xanthan gum, we used

many eggs to stick the flours together. A better product results when rice

flour is combined with other flours--potato starch (!), tapioca, or soy. A

flour mixture and the addition of xanthan gum can make the food so tasty

that no one will ever guess it's a diet product. (It's all chemistry, isn't

it? The definition of xanthan gum is 'a powder milled from the dry cell

coat of a microorganism called Xanthomonas campestris grown under

laboratory conditions, it works as a substitute for the gluten in yeast

breads and other baked goods. So it just gives the dough some 'stretch,' I

Hi, . Sorry it took me so long to get back to you. I didn't have the

book that had the pancake recipe with me and then I was sick. In looking at

the recipe, I see that it uses dry buttermilk powder (which of course is a

dairy), so I guess it wouldn't be a good one for us. Sorry. If you want it

anyway maybe you could substitute something else for the buttermilk powder.

I don't know what that would be, but I will send you the recipe if you want
