They are no better or worse than any nuts you would find at the HFS. Soaking nuts does not get rid of the mold, but I do believe it reduces some of the aflatatoxins. But another thing I've found is that after the nuts are soaked, you can easily tell which ones are bad. They might *look* fine, but they will be mushy and/or bendy. Some kinds will change color a bit too. It's work - you have to feel the nuts, but it's nice to have a method. Cheers! So the ones that are still soft inside and discolored are not good, tossem? Tossem all? Cause i have noticed a lot of them are like that and i figured it was normal from the soaking and have been using them anyway - cooked nut flour stuff. There is a lot of that are colored in the middle etc. I would be throwing out half each time. I had 1 that tasted like mold one time. I tossed the batch because of it. Then you'll know if they are just colored funny or if they are really bad. So I don't taste each bad one, but just sort of " get to know " that particular batch based on a sampling. I only toss the bad ones and keep the rest. But I usually only have a few - maybe 5% of bad nuts. I order a lot from Azure.
