I have heard similar concerns with the cheeses, about mushrooms, especially

wild mushrooms. Like Morels, which are just poking through in Michigan now.

A friend told me her GI told her not to eat wild mushrooms, or at least very

sparingly. Has anyone else heard this?

crispy nuts

Anyone have info on how long crispy nuts can be kept in frig without nutrient

loss? See Fallon writes they can be stored airtight at room temp except Walnuts.

I don't want to freeze since I've read that causes some deterioration of

nutrients and flavor.

Dehydrated low in Excalibur.

What I've come across in Nourishing Traditions is that they " may be stored

for many months at room temperature in an airtight container " (except for

walnuts as you already wrote). I'd imagine that the fridge would extend that

" many more months. "

The only specific storage guideline given in NT (or at least that I could

find) are that " pecans will last about four months at room temperature. "
