I ate there about a year and a half ago. I explained my situation on the phone before arriving and again when I got there. There were vrey responsive. I was able to bring my own bread to have with the Bagna Calda. They answered my questions respectfully, and checked with the kitchen if they did not know. There are many dishes that do not come with cheese, and don't let them grate cheese on your dishes! My main suggestion would be to not go at a busy meal time.
