I'll try to find better. in switzerland, a company is planning to develop a fungus to digest gluten in cereals and make it safe for celiacs. probably in a pop-a-pill form (like lactase) http://www.letemps.ch/template/economie.asp?page=9 & article=190614 they name a company: FunZyme BioTechnologies a CEO: Reto Stšcklin a time frame: 6 to 8 years (that's the best they can do included " fda " approval) the protease made by the fungus breaks bigger proteins into basic harmless aminic acid (the best translation I can do.. it's not my field) an other property of the fungus could be to kill prions (cf mad cow disease) ----------------------------------- along with the sofinova/silicon valley project they anonced a few weeks back, gluten is getting a LOT of attention, and hopefully, that will translates into more goodies on the shelves. ;-) Sophie and .
