I checked with our Kitchen Operations department and they confirmed that the Gluten Free pasta is cooked separately, stored separately and reheated separately in all of the restaurants. We also have the following Gluten Free options available at all of our locations. Main Courses: * Baked Chicken. This is a chicken breast with the wing bone attached. It is marinated in oil and spices and baked in the oven. You can order this meal with the broccoli and or a side of Gluten Free pasta if it is available. * Caesar Salad (with or without chicken) - ask for it without the croutons and note that there is a small amount of White Worcestershire Sauce in the Caesar Dressing. Sauces * Tomato Sauce * Mushroom Sauce Side Dishes: * Chicken Fajita strips. These are grilled chicken strips and have no breading. They are a great addition to the Caesar Salad! * Broccoli covered with Mizithra cheese, Brown butter and Olive oil. * Italian Sausage Soups and Salads: * Balsamic Vinaigrette Dressing. Second, I just had a few questions on your 'processes' when cooking GF pasta...mostly around cross contamination issues... 1. Do you cook the GF pasta seperately from the other pasta (different pots, clean water, different strainers, etc..) to ensure no 'wheat starch' from the regular pasta gets in the GF pasta? 2. Do you list the ingredients of your pasta sauces (i.e. to ensure that they have no gluten as well)? what about other items on the menu like the ice cream (gluten can be everywhere!??!)? 3.
