Guest guest Posted June 13, 2004 Report Share Posted June 13, 2004 Hoisin Chicken and Broccoli Stir-Fry Cooking Light Nonstick cooking spray 1 tbsp vegetable oil 1/3 cup fat-free, less-sodium chicken broth 3 tbsps hoisin sauce 2 tbsps dry sherry 2 tbsps orange juice 1 tsp cornstarch 2 tsps bottled minced garlic 2 tsps bottled minced fresh ginger 1/2 tsp sesame oil 1 lb chicken breast tenders 3 cups bagged broccoli florets 1 can (8 ozs) whole water chestnuts, drained Coat a large nonstick skillet with cooking spray. Add the vegetable oil and heat over medium-high heat. In a glass measure or small bowl combine the chicken broth, hoisin sauce, sherry, orange juice, cornstarch, garlic, ginger and oil; set aside. Add the chicken tenders to the pan and saute 2 minutes. Add broccoli and saute 5 minutes. Add chestnuts and saute 2 minutes.
