Guest guest Posted July 16, 2004 Report Share Posted July 16, 2004 Diabetic Orange Pork Roast pork loin roast --- 1 1/2 lb low-calorie margarine 1/4 cup --- sugar 2 tsp --- low-fat, low-sodium chicken broth 2 cups --- cornstarch or arrowroot powder 1/4 cup --- Grand Marnier 1/4 cup --- (I would omit this) orange marmalade 1/4 cup --- grated orange peel 2 Tbsp --- cloves 1/8 tsp --- orange slices 5 ea --- fresh parsley 1 ea --- Preparation Instructions Preheat the oven to 375 degrees F. Place the pork roast on a roasting rack. Melt the margarine in a large saucepan and add the sugar. Combine the chicken broth and the cornstarch or arrowroot powder. Add to the saucepan and stir until thickened. Add the remaining ingredients except the orange slices and parsley. Cook for 2 minutes on low heat. Brush one-half of the sauce over the pork. Roast the pork for about 60 minutes until there are no traces of lpink. Heat the remaining glaze to serve on the side. slice the pork and garnish with orange slices and parsley to serve.
