SHREDDED ZUCCHINI

Yield: 4 side-dish servings

INGREDIENTS

- 2 small zucchini (5 ounces each), shredded (2 cups)

- 1 tablespoon butter or margarine, cut into pieces

- 1/4 teaspoon salt

DIRECTIONS

In 10-inch skillet, combine zucchini, butter, and

salt; cook over medium-high heat, stirring frequently,

until tender-crisp, about 3 minutes.

Nutritional Information Per Serving (1/4 of recipe):

Calories: About 35, Protein: 1 g, Carbohydrate: 2 g,

Fat: 3 g, Cholesterol: 8 mg, Sodium: 174 mg

Diabetic Exchanges: 1 Vegetable, 1/2 Fat
