Guest guest Posted July 5, 2004 Report Share Posted July 5, 2004 Healthy Exchanges Jo Lund Ham and Rye Strata 6 slices reduced-calorie rye bread, cut into bite-size pieces 1 full cup (6 ozs) diced Dubuque 97 percent fat-free ham or any extra-lean ham 4 (3/4 oz) slices Kraft reduced-fat Swiss cheese, shredded 2 eggs or equivalent in egg substitute 1-1/2 cups (12 oz can) Carnation Evaporated Skim Milk 1/2 tsp caraway seeds, optional 1 tsp dried onion flakes 1 tsp prepared mustard Preheat oven to 325 deg F. Spray an 8- by 8-inch baking dish with butter-flavored cooking spray. Arrange half of bread pieces in bottom of prepared baking dish. Layer ham, Swiss cheese and remaining bread pieces over top. In a large bowl, beat eggs with a fork until fluffy. Add skim milk, caraway seeds, onion flakes and mustard. Mix well to combine. Pour egg mixture evenly over top. Bake for 45 to 50 minutes. Place baking dish on a wire rack and let set for 10 minutes. Cut into 4 servings.
