I got it out of the Company's Coming cookbook " Diabetic Cooking " Lori Couscous Seafood Salad 1/2 cup uncooked couscous 2/3 cup boiling water 1/2 cup finely diced green pepper 1/4 cup finely diced celery 2 tbsp thinly sliced green onion 3/4 cup chopped imitation crabmeat (about 3 oz) 1/2 cup frozen tiny peas, thawed 3/4 cup shredded fresh spinach leaves 2 tsp toasted sesame seeds ~*~ DRESSING ~*~ 2 tbsp rice vinegar 2 tsp ketchup 1/2 tsp granulated sugar 1/8 tsp garlic powder 1/16 tsp ground coriander 1/16 tsp ground oregano 1 tsp canola oil Stir couscous into boiling water. Cover. Let stand for 5 min. Fluff with fork. Turn into medium bowl. Cool. Add next 7 ingredients. Toss. DRESSING: Whisk all 7 ingredients in small bowl. Pour over spinach mixture. Toss lightly. Makes 4 cups. Serves 4.
