Hugs, Marilyn Healthy Exchanges by Jo Lund From the Arthritis Cookbook, page 218 White Chocolate Rice Pudding 1(4 serving) pkg Jello Sugar Free White Chocolate Pudding 2/3 c Carnation Non-fat Dry Milk Powder 1 1/2 c water 1/2 c Cool Whip Lite 1 1/2 c cold cooked rice 2 tbs (1/2 oz) mini chocolate chips 2 tbs (1/2 oz) chopped pecans In a large bowl, combine dry pudding mix, dry milk powder, and water. Mix well using a wire whisk. Blend in Cool Whip Lite. Add rice, chocolate chips, and pecans. Mix gently to combine. Evenly spoon mixture into 4 dessert dishes. Refrigerate at least 30 min. HE: 3/4 Bread, 1/2 Skim Milk, 1/2 Fat, 3/4 Slider, 9 optional calories 168 Cal., 4 gm fat, 5 gm. protein, 28 carbohydrate, 394 mg sodium, 146 mg calcium, 1 gm Fiber.
