Guest guest Posted July 6, 2004 Report Share Posted July 6, 2004 Healthy Exchanges Jo Lund Pineapple Salad 4 serving pkg Jell-O sugar-free lemon gelatin 1 cup boiling water 3/4 cup Diet Mountain Dew 3/4 cup Cool Whip Free 1 cup crushed pineapple, packed in fruit juice, drained In a large bowl, combine dry gelatin and boiling water. Mix well to dissolve gelatin. Stir in Diet Mountain Dew. Refrigerate 1 hour or until mixture just starts to jell. Whip with a wire whisk until fluffy. Blend in Cool Whip Free and pineapple. Spread mixture into an 8- by 8-inch dish and refrigerate until firm, about 2 hours. Cut into 6 servings.
