Toma,

Thank you for all your hard work! My partner has been cutting and pasting

the recipes so I could print them into a binder. She has commented that

several recipes sound delicious!!! So, I guess, thanks to your hard work,

we will be eating " good " GFCF food. I had been lazy in the past two years

because I kept finding yucky recipes. My daughter would refuse to eat.

Now, maybe she will :-)

Do you have any recipes for Pumpkin pie? Perferably nut, dairy and soy free? I have been searching and haven't found one yet. Thanks!!!

Thanks Alyssa! I'll check out that site. I actually used the Vanilla Silk Frosting recipe for my daughters baptism cake and her 1st birthday and it was WONDERFUL! No one could tell it was dairy free!

I have found a couple pancake recipes that have called for eggs and I've tried a few different substititions for the egg (applesauce and banana's) but they are just so heavy! Any suggestions (from anyone!) would be greatly appreciated...especially by Josie since she'll be eating them at daycare!

I know that I have a pancake recipe here somewhere. Not sure if it calls for eggs though. It is chocolate pancakes with strawberry syrup.

Raspberry-Orange Ice Drink M, E, W, P, S, N 2 cups fresh or frozen raspberries 1 6-oz. can frozen orange juice concentrate, thawed and undiluted 2 1/2 cups seltzer 3 T. powdered sugar ice cubes Combine raspberries, orange juice, and seltzer in an electric blender; cover and process until smooth. Add sugar and ice, and process again. More sugar may be added if desired.

Bake for 40 to 45 minutes, until cake tester inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks. Frost when completely cooled. Note: Baking powder is intentionally listed twice in this recipe. The combination of 3 T. water, 3 T. oil, 2 tsp. baking powder; mixed together is the substitution for 2 eggs.

Add remaining ingredients. Beat on low speed until ingredients are moistened. Beat on medium speed until creamy.

Hi, I know I am a bit behind on this. But how do you find soy and

milk free margerine? I have been looking and have not found any that

was milk and soy free. I have also been looking for soy free

shortening and can't seem to find any.

I am new to the list and to diabetes. I do find I have a problem with the number

of recipes posted. It causes generation of too many post making it impossible to

follow or gain any educational value from the list. I think if I wanted to get

recipes I would join a list for recipes. Just my thought!
