FRESH TOMATO ASPIC

Yield: 6 slices (6 servings)

INGREDIENTS

- 2 cups peeled, seeded, finely chopped fresh

tomatoes (about 1 pound)

- 1 envelope unflavored gelatin

- 2 teaspoons balsamic or red wine vinegar

- 1/4 cup very finely chopped celery leaves

- 1/2 teaspoon salt

- 1/4 teaspoon freshly ground black pepper

- 6 lettuce leaves

- 2 tablespoons light or low-fat mayonnaise

DIRECTIONS

Place 1 cup of the chopped tomatoes in a small

saucepan; sprinkle with the gelatin. Bring just

to a boil over medium heat, stirring constantly,

until the gelatin is dissolved.

Remove from the heat; stir in the remaining tomatoes,

the vinegar, celery leaves, salt, and pepper; mix well.

Prepare a 7x3-inch loaf pan with nonstick pan

spray. Pour the mixture into the pan. Cover and

chill overnight or until firm.

Unmold; slice into 6 equal portions and place on lettuce

leaves. Top each serving with 1 teaspoon light mayonnaise.
