Guest guest Posted June 21, 2004 Report Share Posted June 21, 2004 Healthy Exchanges By Jo Lund Zach's Chocolate Isle Salad 1 (4 serving) pkg JELL-O sugar free instant chocolate fudge pudding mix 2/3 cup Carnation Nonfat Dry Milk Powder 1-1/2 cups water 3/4 cup Dannon plain fat-free yogurt 1 tsp vanilla extract 1/2 cup Cool Whip Free 2 cups (2 medium) diced bananas 1/4 cup (1 oz) chopped dry roasted peanuts 6 (2-1/2 inch) chocolate graham cracker squares In a large bowl, combine dry pudding mix, dry milk powder and water. Mix well using a wire whisk. Blend in yogurt, vanilla extract and Cool Whip Free. Add bananas and peanuts. Mix gently to combine. Coarsely crush chocolate graham crackers. Stir crumbs into pudding mixture. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving.
