Spinach Feta Rice

1 cup uncooked rice

1 cup vegetable or chicken broth

1 cup water

1 onion, medium

1 cup mushrooms, sliced (4 oz.)

2 cloves garlic, minced

1 tbsp lemon juice

1/2 tsp dried oregano leaves

6 cup spinach leaves, shredded

4 oz. feta cheese, crumbled

1/2 tsp freshly ground black pepper

1/4 cup chopped pimiento

Bring rice, broth, and water to boil in medium saucepan. Stir,

cover, reduce heat, and simmer 15 to 20 minutes or until rice is

tender and liquid is absorbed. Cook onion, mushroom, and garlic in

large skillet coated with cooking spray until onion is tender. Stir

in lemon juice and oregano. Add spinach,cheese, and pepper to rice;

toss lightly until spinach is wilted. Garnish with chopped pimiento

if desired. Makes 6 servings.
