Guest guest Posted July 11, 2004 Report Share Posted July 11, 2004 Ginger Orange Chicken Makes 4 servings 4 halves (1 lb) Chicken breasts, skinless 3/4 cup Orange juice 1/3 cup Soy sauce 1 tbsp Brown sugar 1 tbsp SPLENDA® 1 tbsp Ginger root, grated 1 1/2 tbsp Cornstarch 1 Orange, sliced 2 tbsp Parsley, snipped Preheat oven to 350°F. Arrange chicken breasts in a single layer, top side up, in a baking dish. In a small bowl combine orange juice, soy sauce, brown sugar, & ginger. Pour over chicken. Bake for 35 minutes. Remove chicken from the pan. Combine cornstarch with Splenda®, and 1/2 cup of water. Stir until smooth and then stir into pan juices. Put chicken back into the pan, top side down in the sauce. Bake 10 - 15 minutes longer or until sauce is thickened and chicken is tender when pierced with a small sharp knife. Garnish with orange slices and parsley.
