Having said that, we are all different and food affects us differently. Even the same food on a different day can give you a higher or lower reading. The only answer is to eat something and test 2 hours later. For example I never used to be able to eat summer fruit without it raising my BG levels. We had some friends over the other night and some of the things I served were watermelon and cantaloupe. I ate some and did not test any higher than I normally do. Have any of you noticed that you respond differently to different types of starch? Recently I discovered that after I have macaroni or any pasta (hot or cold) my bgl hardly budges. Potatoes are ok too, but rice and bread sends it soaring. I usually combine all these things will a little fat/fiber, so everything else is comparable. Guest guest Posted June 15, 2004 Report Share Posted June 15, 2004 i find the more processed the carb in general, the more insulin i need. do you know ezekiel bread? that i can eat easily, but something like a kaiser roll is usually a no go. sometimes i need to take two shots because of the way the super processed stuff is absorbed, or so i think. i also can't do fruit easily, all that fiber notwithstanding. rice i suspect is difficult 'cuz it's something that gets mashed down and you can get more in a cup than a cup so to speak... rach > Hi, > > Sorry if this is a repeat, but I couldn't find it anywhere in the archives.
