Salmon Puff 3 cups mashed potatoes 1-1/2 cups cooked salmon 1 onion, finely minced 1 tbsp parsley, chopped 2 eggs, separated 2 tbsps butter 1/2 tsp salt 1/4 tsp pepper Heat oven to 325 deg F. Grease with the butter 2-quart baking dish. Mix potatoes and salmon, breaking salmon into flakes. Add onion, parsley and egg yolks, salt and pepper. Mix well. In a separate bowl, beat the egg whites with an electric mixer until they form stiff peaks. Fold egg whites into salmon mixture. Transfer mixture to prepared dish and bake until brown, about 45 minutes. Turn heat up to 350 degrees for 15 minutes to brown.
