Guest guest Posted July 18, 2004 Report Share Posted July 18, 2004 Diabetic Tri-Colored Rotini Salad cooked tri-colored rotini pasta 2 cups --- halved cherry tomatoes 1/2 cup --- diced red pepper 1/4 cup --- sliced black olives 1 Tbsp --- 15-oz can artichoke hearts, drained and halved 1 ea --- balsamic vinegar keep an eye on the calories, as all balsamics are not the same ;-)1/4 cup --- olive oil 2 tsp --- Dijon mustard 1 Tbsp --- minced, fresh basil 2 tsp --- fresh ground pepper to taste 1 ea --- Combine the first 5 ingredients in a large bowl. Whisk together the second 5 ingredients. Pour the dressing over the salad and toss to coat well. Serve at room tenperature.
