Lund's Cooking Healthy with the kids in mind.

Sunshine Pancake Sandwiches

serves 4

1 8 oz package ff philadelphia cr cheese

1/4 sup plus 2 tablespoons splenda

1 cup unsweetened orange juice

1 teaspoon coconut extract

1 4 serving pkg sf cook and serve pudding

2/3 cup Carnation nonfat milk powder

1/2 cup water

1 1/2 cups rf Bisquick

1 cup skim milk

2 tablespoons flaked coconut

In a small bowl stir cream cheese with a spoon intil soft. Add 1/2 cup

splenda, 1 tablespoon of orange juice and coconut extract. Mix cently to

combine

and set aside. In a medium saucepan, combine dry pudding mix, dry milk powder

and balance of orange juice and water. Cook over medium heat, until mixture

thickens, stirring often. Meanwhile, in a large bowl, combine baking mix. 2

tablespoons splenda and the skim milk. Using a 1/4 cup measuring cupas a guide,

pour batter onto a hot griddle sprayed with butter flavored spray. This fill

make 8 pancakes. Lightly brown on both sides. For each serving, place 1

pancake on each plate, spread 1/4 cup of cheese mixture over top, then cover

with

a second pancake and spoon about 1/3 cup orange sauce over them. Garnish

each with 1 1/2 teaspoons od coconut and serve.

328 calories, 4 gm fat, 18 mg protein, 55 gm carbs, 978 gm sodium, 255 mg

calcium, 1 gm fiber

Island Breakfast Muffins

serves 4

1 8 oz package ff Philadelphia cream cheese

1 tablespoon splenda

1 teaspoon rum extract

1/8 teaspoon ground cinnamon

1 cup crushed pineapple packed in juice, drained

1/4 cup raisins

2 english muffins, split and toasted

In a medium bowl, stir cream cheese with a spoon until soft. Add splends rum

extract and cinnamon. Mix well to combine. Stir in pineapple and raisins.

Evenly spoon about 1/2 cup mixture on each muffin

172 calories, 1 gm fat, 11 gm protein, 32 gm carbs, 481 mg sodium, 46 mg

calcium, 2 gm fiber

Substitute Atkins Baking Mix for the Bisquick; also, use whole wheat or

rye English muffins (more fiber, fewer carbs.)
