Nutty Sweet Potato Biscuits 2-3/4 cups all-purpose flour 1 tbsp plus 1 tsp baking powder 1/2 tsp salt 2/3 cup sugar use splenda 1/2 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 cup chopped walnuts 2 cups cooked mashed sweet potato 3 tbsps butter, melted 1 tsp vanilla extract 2 tbsps all-purpose flour Cooking spray Preheat oven to 450 deg F. Combine first 6 ingredients in a large bowl. Add nuts; stir well. Combine sweet potato, butter and vanilla in a medium bowl; add to flour mixture, stirring just until dry ingredients are moistened. Sprinkle 2 tbsps flour evenly over work surface. Turn dough out onto floured surface, and knead 10 to 12 times. Roll dough to 1/2-inch thickness; cut into rounds with a 2-inch biscuit cutter. Place rounds on a baking sheet coated with cooking spray. Bake at 450 deg F for 12 to 15 minutes or until biscuits are golden.
