Guest guest Posted August 9, 2004 Report Share Posted August 9, 2004 *Yogurt Cinnamon Muffins 1-1/2 cups flour 3 tablespoons sugar (splenda is fine) 2 teaspoons ground cinnamon 1-1/2 teaspoons baking powder 3/4 teaspoon baking soda 1/4 teaspoon ground nutmeg 1/8 teaspoon salt 1 egg, at room temperature 1/2 cup plain low-fat yogurt, at room temperature 3 tablespoons fat-free margarine 1-1/2 teaspoons vanilla Preheat oven to 400 degrees. Spray eight muffin cups with nonstick spray, or line with papers. In a medium bowl, sift together dry ingredients. In a large bowl, combine remaining ingredients. Beat on low speed until blended. Stir in dry ingredients just until moistened. Spoon batter into muffin cups. Bake 12 minutes, until lightly browned. Remove to a rack to cool. Makes 8.
