Guest guest Posted July 5, 2004 Report Share Posted July 5, 2004 Simple Cabbage Sausage Soup 1 tbsp olive oil 1 medium onion, chopped; or 1 cup frozen chopped onions 1 tbsp minced garlic 1 (16 oz) package shredded cabbage and carrots (coleslaw mix) 1 (15 oz) can red or pinto beans 1 (14.5 oz) can diced tomatoes 8 ounces low-fat kielbasa or other Polish sausage, chopped 1 (14.5 oz) can chicken or beef broth (low-sodium versions work well) 2 cups water 1 tsp pepper Heat olive oil in large soup pot. Add onion and saute for 1-2 minutes or until slightly transparent. Add garlic, cabbage, beans, tomatoes, smoked sausage, broth, water and pepper. Heat on medium-high heat until mixture comes to a boil. Reduce heat and simmer for about 30 minutes or until vegetables are tender.
