Guest guest Posted July 5, 2004 Report Share Posted July 5, 2004 Healthy Exchanges Jo Lund Winter Wonderland Cauliflower Salad 3/4 cup Kraft fat-free mayonnaise 1 tbsp skim milk Sugar substitute to equal 1 tbsp sugar 3 tbsps Hormel Bacon Bits 2 cups chopped fresh cauliflower 1-1/2 cups frozen peas, thawed In a large bowl, combine mayonnaise, skim milk and sugar substitute. Stir in bacon bits. Add cauliflower and peas. Mix well to combine. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving. Serves 6 68 Calories;0g Fat;4g Protein;13g Carbs;396mg Sodium;3g Fiber Hint: Thaw peas by placing in a colander and rinsing under hot water for 1 minute.
